We are talking about the design of wine glasses. This glass is desribed as a wild card, but the rest of the sentence seems slightly ungrammatical to me and I can't make sense of it fully, let alone find a good way to phrase it in English.

It is preceeded by the name of the glass (Glass n.3 - for well-structured white wines) and followed by another short paragraph that explains that the glass is designed for white wines that have aged 3 to 8 years.
I don't think we'd describe a glass as a "wild card"- I assume you mean it has many uses. The "successione dei vini" is the serving order.
