It is really "variable" that I find confusing. Do they use it in the sense of "gradual" maybe? The use of "variable" in Gabriela's link seems to describe a way of assembling roof panels that offers different pitch settings for the purpose of building a roof. I can't see how this can describe a sloping roof that is already fitted in place. That is to say that you wouldn't want to vary the settings of your roof pitch after you have constructed it.
