Assistant is not "assisting" anyone. It is a rank: assistant professor, associate professor, full professor.

It may depend on the institution. In some universities, it is possible to be a professor on a tenure track, which involves doing research and teaching. A research professor usually does not teach, does not get tenure, and only does research. A research professor lives and dies by research grants. An academic professor draws a regular salary from the university as well as gets paid from research grants.
