From this explanation it is clear that in English we would not call this kind of bread "bulk" or "bulky".
If you look up "bulk bread" it means bread in large quantities...عمده فروشی
"bulky bread" would mean oversize bread or difficult to handle because of its size.
I am guessing they use this word in Persian to distinguish it from "flatbreads" such as lavash/sangak/taftun...etc.

"leavened" and "bulky" bread do NOT necessarily address big bread; rather, the former point out the bread is baked without raising agents e.g. yeast, and the latter, also known as bulkie roll, is a New England regional variety of sandwich roll.
