Jeżeli chodzi o "moje" injury, kontekst jest następujący (podkreślenia moje):

a) Culture target strain: Inoculate a tube of non-selective enrichment broth with the designated strain. Incubate the broth at optimal conditions for the strain.
b) Adjust level by dilution: After incubation, dilute the culture in a suitable diluent until the desired level(s). INJURY protocols are usually done on pure cultures with 104 to 105 cells/ml.
c) Apply an INJURY protocol: Apply an appropriated culture treatment as in the examples below.
Examples: heat treatment, freezing treatment, chemical treatment, storage at 4 degrees C
The conditions for applying stress strongly depend on the type of microorganism and even the selected strain. The selected stress protocol should also resemble the stress of the microorganisms found in the food sample to be used for spiking.
d) INJURY measurement: INJURY efficiency is usually evaluated by enumerating the pure culture on selective and non-selective agars. More than 0,5 log10 cfu/ml difference is expected for a sufficient stress application.

The pathogens were exposed to heat stress, cold stress, freeze stress, acid stress, oxidative stress and "food" stress. Sub-lethal injury was determined by plating in parallel on selective and non-selective media. The statistical significant differences in enumeration were established. The choice of stress to create sub-lethal injury to cells depended on the fact that the procedure must be easy to handle, repeatable and relevant for stress conditions in foods, but also on the micro-organism itself.

https://sklep.pkn.pl/catalogsearch/result/?q=16140-2:2016 - możliwe, że oryginał napisano w jęz. FR, a następnie tłumaczono na EN. Można porównać w czytelni. Koszty na klienta, of course.
Tak mi właśnie przyszło do głowy, że skoro chodzi o zanieczyszczenie (contamination) żywności metodą "spiking", to może "injury" znaczy w jakimś ich slangu laboratoryjnym efekt tego "spikingowania" (po polsku to nie działa, "spiking" to wzbogacenie albo fortyfikacja). Czyli skuteczność? Ale w tekście normy pojawia się zwrot "Injury efficiency"...
IMO tutaj "injury" ma znaczenie zbliżone do zakażenia, zarażenia. Ja bym szukał w synonimach do tych słów. Na pewno nie skażenie, ponieważ w tekście jest "contamination".
