Mam w tekście dość istotne rozróżnienie pomiędzy apprenticeship a internship.

Training and gaining experience can take place in different ways either as work placement which may be undertaken while in training or through organizations whose task is to nd employment for someone brokering this placement, or through supported internships, or lastly gaining by an apprenticeship.
An apprenticeship is different, as this is work-based training while an internship is work-based learning. An intern gets the chance to work in a trade or at a company for a limited period of time, for example a summer. They may be offered full-time employment after internship completion. Supported internships are designed to enable people with additional support or learning challenges to achieve sustainable, paid employment by equip- ping them with the skills they need for work through learning in the workplace.

Z tego, co się zorientowałem, to internship = work placement, więc zasadniczo różnice rozgrywają się pomiędzy apprenticeship a internship. Czyli w polskiej wersji zapewne "staż" vs. "praktyki zawodowe".
Odruchowo przetłumaczyłbym internship jako staż, ale z tego co widzę, to raczej staż ma charakter poważniejszy, czyli bliższy apprenticeship.
