Canonのdegital cameraのofficial specificationsを見てみましたが正方形画素のことまでは書いていませんでした。
私が通っているEOS写真教室の並木先生(デジタル写真のプロ)によると、この画素がまた三色に分かれその合成によりもろもろの色彩再現が行なわれているのだそうです。

This is the distance from pixel to pixel, not in the screen but in the image sensor.

It is actually often called \"dot pitch\", but I am reluctant to use that because some people might confuse that with the pixel to pixel distance of monitors, where the same terminology is used.
