Keep the Italian (many sites do). some Italians who are professore straordinario call themselves 'full professor' on their websites but it seems that can only be the case after 3 years as professore straordinario. Then they can become professore ordinario (full professor). I'd suggest using professor as explanation to be safe. On Swiss sites professore straordinario is associate professor, but not on Italian sites. Good luck!! (I thought Belgian education system was bad...)

I think it is the equivalent of the Dutch 'buitengewoon hoogleraar', for which this is the official translation, according to the University of Amsterdam website.
