agree  Jocelyne Cuenin: Intéressant : soft waxy // firm waxy. Donc, on pourrait éventuellement avoir pour soft waxy "à la fois ferme et fondante"?

  -> Well, waxy isn't a strict synonym for 'ferme', whence the problem. But as I point outed, waxy is bound to be firm, but firm may not be waxy. So we can have 'ferme et farineuse' or 'ferme et ???'
