Tel que je le "vois" le résultat final doit ressembler à une sorte de pâte sablée froide découpée en ronds avec une garniture glacée sur le dessus. En effet, base à la noisette semble convenir. Cela dit, je pense qu'on peut utiliser de la pâte de noisette pour fabriquer une pâte à crumble par exemple (à la place du beurre, ça doit être excellent... pardon pour la digression).
Je pense que "reconstructed" signifie simplement qu'on est parti de différents ingrédients pour constituer une base et il n'est pas utile de le transposer ici.

Just a thought: is the EN in your document irreproachable, native-speaker EN? I am just thinking that between FR and EN (and undoubtedly other languages) there is often a degree of (ahem!) fluidity in the way words like 'earth' / 'soil' / 'ground' are used; hence why the idea of this being a 'ground' is not entirely implausible. As for the 'reconstructed', if this is NOT reliable EN, then I think you can pretty much ignore it as being a rather clumsy attempt at making it clear that it is not 'real' earth! Maybe you might use « », but I don't really think this is necessary, I'd be inclined to simply leave it out — unless of course there were any opposition being made between this particular 'reconstructed' earth and some other kind of 'earth'.

Tout à fait Tony, c'est ce que je pense aussi. "Base à la noisette" me vient donc pour le moment. Je ne sais pas trop quoi faire de ce "reconstructed" par contre.

Ah, OK, then it seems clear that 'earth' here is being used in the sense of a 'base' or 'ground' for the whole dessert.

Je ne pense pas qu'il s'agisse de "pâte" ici puisque que l'élément "reconstructed hazelnut earth" contient en lui-même de la "Hazelnut paste". Je vois que vous parlez de garniture ici. Pourquoi ne pas utiliser ce terme ? "Garniture à la noisette" ? Et que faire du "reconstructed" ? Merci :)

Merci Sara pour votre contribution. @Tony, tous les ingrédients mentionnés ci-dessus constituent ce "reconstructed hazelnut earth". Je n'ai hélas aucune photo. En tout dernier, à la fin du dressage, on a : "Put the frozen reconstructed hazelnut earth on monoportion boards and place the frozen yuzus on top. " Merci

What does the final thing LOOK like? Could this be 'earth' in the sense of the ground for some kind of sculpture — you know, with a chocolate squirrel or something?!
Which bits of the aforementioned ingredients are the ones used to make this 'earth' — or is it ALL of them?
