Yes, I think it has a positive meaning. Something like: the farmer takes a long pause and choked up a bit before answering, despite his being very good.

Do you think the term has a positive meaning? "Salt of the earth" has a good meaning, but "salt in the air" seems to be useless. If you think it has a negative meaning, the term may be similar to "casting pearls before swine".

Hi, it seems I'm doing the same translation project and I think the source text is incorrect. I think what the speaker actually says is "salt of the earth". I hope this help.
