Always confirm how tableware will be handled within the operation before citing — ex. will it be individually rolled using gloves as best practice vs. held in bulk containers for use.
• Employees should try to avoid improper handling of the food-and lip contact surfaces of utensils/plateware/glassware to prevent their contamination.
