Hola, aunque no tengo el contexto suficiente para poderlo asegurar al 100%, creo que "in-house stores" son las tiendas o establecimientos que se encuentran dentro del recinto de un hotel, por ejemplo, una tienda de regalos, una peluquería, un kiosco de periódicos, etc. Como verás en el enlace, los "in-house restaurants" son los restaurantes que hay dentro del recinto de un hotel, y a los que se puede ir sin salir del edificio de ese hotel. Espero que se refiera a eso. También podrías traducirlo como "tiendas o establecimientos in situ o en el emplazamiento". Un saludo.
