If you find a butcher who makes it in the traditional way, it's delicious. Nowadays, however, the supermarket versions are often made by injecting a mixture of 'salts' (chemicals) and - voila - instant Kasseler. No need to lose profit by waiting for the meat to hang in a smoking chamber and slowly take on the flavours ...

Hmm, if someone wants to be pedantic, it's really 'cured neck of pork', because Kasseler is smoked _and_ salted.
