I know it means the representative model of a product but wondered if there was a specific term.

Yes you're right - my fault, although flagship does not refer exclusively to cars, in fact in the automobile industry a modello di punta is often referred to in Italian as "ammiraglia" stemming from the origins of the word flagship although as I said below, flagship model is also fine - that's why I added it to the glossary because it can be used in other industries.
