criminology
A criminology study that interviewed different criminals to see if the way they tell their crimes is different according to the type of crime they committed and their "esperienza nel settore della devianza".
Native speakers please help!

deviance
Deviance is a generic concept in sociology. Quoting from Wikipedia:
"Crime, the violation of formally enacted law, is formal deviance while an informal social violation such as picking one's nose is an example of informal deviance."
So picking one's noise is a deviance, too. I think you should translate it as deviance. Below the URL of the Wikipedia page.

I would translate the whole expression as "their past deviant behaviors".

moving in criminal circles
"Much youth crime is carried out by gangs and moving in criminal circles is a major risk factor in the inception of a career in crime. "

ingroup experience

"...and their INGROUP EXPERIENCE".

experience as a professional deviant
There are no doubts about deviance or deviant, which are technical terms. The problem would seem to be "settore". I am a professional translator, but he is a professional deviant." Checking it agains Google it is used.
