before the listing of a name, surname and age on a document of property ownership. I am not sure there is no typo somewhere as instead of "cognomen" it says "cogneman". When the items are listed, there is just the name, surname and age supplied.

'Eorum' may be a misspelling for 'coram', as 'cogneman' surely is for 'cognomen' ('surname'). Here it seems to mean 'in the presence of', and as a preposition requires its object in the ablative. But the names may not bear any termination, since they often don't have Latin equivilents or loan translations.
