Cantidades
1. Los alimentos proveerán las cantidades suficientes de nutrientes.
2. Sabemos que estamos consumiendo las cantidades adecuadas cuando nuestro se mantiene.
No me queda claro si esas "cantidades" deben ser amounts or quantities. Por ejemplo, "sufficient amounts of nutrients" or "sufficient quantities of nutrients".

How to tell the difference between "easy" and "pro" questions:

A pro question is anything else... in other words, any question that requires knowledge or skills that are specialized (even slightly).
Another way to think of the difficulty levels is this: an easy question is one that deals with everyday conversation. A pro question is anything else.
When deciding between easy and pro, err on the side of pro. Most questions will be pro.
* Note: non-member askers are not given the option of entering 'pro' questions; the only way for their questions to be classified as 'pro' is for a ProZ.com member or members to re-classify it.

Quantity is more formal/technical than amount or number. A quantity of or quantities of can be followed by a countable noun or an uncountable noun.

E.g. ... getting enough nutrients. The amount of vitamin D provided by being exposed to 15 minutes per day in the sunshine should be sufficient/enough to prevent osteoporosis.
