"Foulé" c'est avec les pieds. Ça fait 15 ans que je fais les vendanges, en Bourgogne, en Beaujolais, en Suisse (Valais et Vaud), aucun vigneron ne dit plus "fouler". On presse le raisin.

Yes, the term fouler or foulage is still used for a light crushing. Though technically it means with the feet, some mechanical techniques are in use.
For a more familiar registar you could say
"faire la pressurer à la vigne"
