the number of vertices
The definite article should be used before vertices, as you know the differences among “the number of …s”, “the number of the …(s)” and “a number of …s”.

number of peaks
Much as Euler gave a formula for the number of faces, edges and vertices in a polyhedron, Maxwell relates the **number of topographic peaks**, pits and saddles on a surface. In the case of a sphere, the formula is p+q–s=2, where p is the number of peaks, q the number of pits and s the number of saddles.

This invention relates to the measurement of surfaces and coatings wherein parts of the surface or coating protrude above the general **topography**. The size and **number of peaks** on the surface are counted to determine the contribution to the over all surface roughness.

number of elevations
Here is a website that has some info using the term "elevations."
http://imnh.isu.edu/DIGITALATLAS/geog/basics/topo.htm
Contour Lines: Contour lines are used to determine elevations and are lines on a map that are produced from connecting points of equal elevation (elevation refers to height in feet, or meters, above sea level).
Cartographers solve the problem of representing the three-dimensional land surface on a flat piece of paper by using contour lines, thus horizontal distances and vertical elevations can both be measured from a topographic map.
