: At cookery school you are taught that sauce has some sort of thickening agent (which can be a huge range of things) but a jus is simply reduced stock (i.e. you add stuff to a jus to make a sauce). / mint, cranberries etc. are the stuff.

Interesting. I would point out that mint sauce, cranberry sauce, napolitan sauce and many others totally lack 'stuff' to thicken them. Alas my age is showing, I would never use 'jus' in English, though I thank you for the lesson :-)
