: Having eaten joints of beef every Sunday for the first half of my life and pasta for the second half of my life, I don't need a dictionary to know that a joint is un arrosto. In Italy there are much smaller variety of joints (cuts specially for roasting).

I see, but dictionaries seem to suggest the other meaning as well. :)
Oxford actually says what you suggest and apparently it's ALSO like "roast beef". Now I'm totally confused myself!

: A fiorentina is a T-bone steak not a joint. That whole piece would be a joint you could roast from the short loin, but you tend to cut steaks from it. Joints can be cut from many places. Also a joint is also US slang for a bar. A "joint of beef" is not.

As far as I understood from the references above mentioned, the join should be the same part of the animal as the one used to cut out Fiorentina,though coming in one single piece instead of cutting it into steaks as happens with the T-bone

I said they tend to. I have tried getting the English cuts in Italy, but the butcher says things like, that part of the animal gets exported to Germany or something. Compare this google with the above:

Not really for the joints of beef. British tradition is to use every single part of the animal. So every butcher will sell joints from all parts of it.

Now I understand what you mean. Thanks for your help.
If I say I want a piece or cut of beef to a butcher, he is going to ask me what I want to do with it, boil, braise it, feed the dogs or what. If I say I want to roast it, he will offer me variety of different cuts called "joints". The perfect translation needs to convey a piece of beef specially for roasting which really makes your mouth water and think of Sunday dinner in England. It is almost a religion, and of course eaten after church in the morning.
And then the Tower of London has been guarded by the beef eaters since the time of Henry VIII.
This explains how to cook what this author considers the best roast, but of course many other types of joint exist, not just the ribs (a rib joint is the most expensive)

Quindi, anche letteralmente, il pezzo/taglio di carne che sarà arrostito. Del resto quando si va dal macellaio si chiede un pezzo per arrosto, o almeno le vecchie casalinghe fanno così, non l'arrosto che si va a comprare in rosticceria dove ti vendono piatti già cucinati.
