The photo is of the *tender* part of the breast meat. It is a standard, widely used, butcher (not just "culinary") cut in the US. The cut is considered "choice" over here (even though I'm not partial to that part of the chicken myself).

Any use of the word "tender" by KFC, a very American company, refers to that cut of meat, or, in this case, to a pseudo-version of that cut of meat.

I just checked my Collins-Robert, and find that it has never heard of chicken tenders. OTOH, my Termium, which is published on this side of the "pond," says that chicken tenders are "filets de poitrine de poulet." Note, however, that the "filet," in this case, is the chicken equivalent of the beef tenderloin, not just a way of cutting a chicken breast.

@ Yolanda It all hinges entirely around whether or not this is the US culinary term (not, I think, well known in GB) — or the proprietary use of the term by KFC, which seels by far the most likely scenario here.

I don't quite see where your ref. mentions 'tenders', nor explains it is a 'standardized term'? It just shows an uncaptioned illustrative photo of chicken breast meat.

Bonjour, ce sont un peu comme des nuggets, sans en être vraiment. Alors, peut-être "nuggets sans poulet"... Cela dit, "tenders" est utilisé dans les KFC.

aiguillettes de poulet

Les chicken tenders (aussi appelés chicken fingers) sont des aiguillettes de poulet panées croustillantes. Il s'agira ici de la version vegan (donc sans poulet :-)

substitut de poulet frit

Des "Chicken tenders" sont des morceaux de poulet frit, donc ici ce sont des "chickenless tenders", soit du poulet frit...sans poulet.
(La traduction "substitut de poulet frit" n'est pas forcément la meilleure, c'est juste pour que vous ayez le sens)

As Maria says, I think this term is specifically used by KFC, who keep it in EN even in their FR restaurants; so be careful to use the correct version used by your customer!

It basically refers, I think, to pieces of (probably reconstituted!) chicken with no bones in them, unlike most of the rest of KFC's chicken pieces.

croquettes sans poulet

Je trouve que "croquettes de poulet" correspond bien a "chicken tenders", donc "croquettes sans poulet" pour "chickenless tenders", le tout en maintenant le ton assez léger du texte.
