It's someone's name It should say "Nicole Sar épouse Brunet". Here's a death certificate signed by her, and she works at this hospital:

I'm guessing that Brunet is her married name. Next time she Googles herself, maybe she'll find this page!

As an abbreviation SAR can be a 'subject access request'. There are several other possibilities for SAR definitions related to suspicious activity.
