Máquina de vacío al 100%

Hi,

I'm working on a recipe and it talks about placing the food in a "máquina de vacío al 100%."

Retirar las burbujas de aire incorporadas a la mezcla introduciéndola en la máquina de vacío al 100% o dejándola reposar durante 8 horas en el refrigerador.

Any advice is much appreciated!

100% 100% should mean that you've to use this "máquina de vacío" to remove completely the air from the (specially designed) bag containing "la mezcla": "bubble-free".

the more I look at it, ... the more a "Máquina de vacío" seems to refer to an "envasadora de vacío"
BUT, if that is the case, I'm still not sure what the "al 100%" could refer to...

Actually I’m no longer convinced that this is... in fact about a sous-vide machine. Maybe get back later with a verdict...

However, if it is indeed a sous-vide m/c then, like many culinary terms, the original French is exactly what would usually be used in English. My doubt is based on the fact that the machine in question appears to be being used simply to remove bubbles, and not for the actual cooking, which is what I understand a sous-vide is used for. Cooking extremely slowly...!

Perhaps Asker could supply clearer context...? What exactly is the machine being used for: removing air bubbles; removing bubbles and then sealing; or removing bubbles and then cooking very slowly?

I took this out of the Agree section, as a Neutral can at times look more negative than intended

agree Carol Gullidge : Ithink this is it! Asker's context makes makes no mention of actual cooking with the machine, but instead of removing the air bubbles. A sous-vide is in fact used for the actual cooking, afaik

a vacuum sealer would take out the pressure; the 100% could refer to "full pressure"
