I do a lot of cooking and have many cook books, and this is what I personally think is meant.
Having looked at a few descriptions of fungal structures, in a culinary sense I don't see what else it could mean. In order to see the structure, the mushroom needs to be left whole rather than sliced. If anyone else comes up with a definite answer I stand to be corrected.
