In Verbindung mit einem irischen Kochbuch. Hier ein traditionelles Frühstück „Pinhead Oatmeal Porridge“.

Long before the arrival of the potato, oats were the Irish winter staple and were used in lots of ways.
Whole oats were ground, the chaff discarded, leaving the “groats”.
When these are chopped into pieces they are called pinhead, or coarse, oatmeal.

In Deutschland wird meines Wissens bei Haferflocken zwischen "kernig" und "zart" unterschieden. "Vollkorn" als Unterscheidungsmerkmal geht m.E. nicht, weil Haferflocken aufgrund des Herstellverfahrens meistens das volle Korn enthalten (siehe auch Link).

: So gehts natürlich auch, dann weiß aber der deutsche Hobbykoch nicht, was gemeint ist. Ich würde vielleicht in einer Fußnote auf das im Original verwendete "Pinhead Oatmeal" hinweisen, das mit einer bestimmte Mahltechnik hergestellt wird.

: Bei "Pinhead oatmeal" ist "grobe Hafergrütze" eindeutig gemeint. Da braucht kein Hobbykoch lange zu überlegen. ;)

Zusammen dann z.B. "Grobe Haferflockengrütze" oder "Porridge aus Vollkornhaferflocken".
Ich würde auf jedenfall den Begriff "coarse" übersetzen, nicht "pinhead".

Haferflocken werden, das ist richtig, einerseits in "zart" oder "kernig" unterteilt (siehe Marke "Kölln"), andererseits aber auch in "Großblatt" oder "Kleinblatt", eben je nach Größe der einzelnen "Haferflocke" (siehe Marke "Alnatura").
"Pinhead" bezieht sich dabei jedoch auf jeden Fall auf "Kleinblatt", eben annähernd klein wie ein Stecknadelkopf.
Porridge aus Großblatt-Haferflocken gelingt nicht wirklich, weil die Stärke des Hafers, die beim Kochen austritt, nicht ausreicht, die groben, großen Flocken in einen sämigen Brei einzubinden. Kleinblatt-Haferflocken hingegen sind ideal geeignet und ergeben ein hervorragendes Porridge!
Porridge gibts bei uns sehr oft zum Frühstück, mein Mann ist Schotte... ;-))

: Pinhead oatmeal (UK) refers to the coarsest grade of chopped oat grains, known as steel-cut groats (USA) grobe Hafergrütze (GER) not rolled oats.

Hafergrütze; grob
Oatmeal (UK) oat groats (USA) Hafergrütze (GER). The oat grains or groats are milled to remove the husks, then chopped or cut to produce three grades: fine, medium or course called pinhead (UK) steel-cut (USA). The word meal derives from Mehl in German (literally Hafermehl) but oatmeal is not as fine as oat flour in the same way as oatmeal (Hafergrütze) has different characteristics to rolled oats or Haferflocken.
Example sentence:
Pinhead Oatmeal is the most traditional oatmeal. It is made from the whole grain, with just the outer husk removed, before the inner groat is cut into three pieces. Soak oatmeal overnight and cook slowly to make the best creamy porridge.
