Ich denke, dein Vorschlag geht in die richtige Richtung. Ich kenne "reserve" in dem Zusammenhang, dass beim Kochen ein Zwischenprodukt übrig bleibt, was man nicht unmittelbar weiterverarbeitet, sondern erst zu einem späteren Zeitpunkt wiederverwendet
