実習態度 This was in a college course outline. Does it mean "attitude for practical learning"?

Attitude (for Participation Assesement)

They have lecture ( in classrooms) program and field research practice (cf. often exercise in hospitals (this is the case for nurse or doctor), actual teaching experiencing project in schools(this is the case for teaching candidate), or laboratory experiment class(case for science major student) sometimes it is an internship course in government or provincial offices- see the URL link for a university syllabus in Ritsumeikan law&politics)
The 実習 applies to everything in the latter case. Just Attitude might be applicable here-I believe everything explanatory can be read from the context.

trainee attitude

実習生
means "trainee" so it might be closer to "attitude of a trainee" (implying willingness to learn?).

attitude toward/during training/practice/exercises

My guess is that this appears in the section on 評価 (evaluation).

I think it would be more accurate to parse this as 実習での態度 rather than 実習生の態度, although the difference may seem slight. One is just the attitude of the student or trainee in general, while the other is a student's attitude during or regarding the 実習 (how they approach doing the exercises or whatever it may be). Here we are talking about the latter.

What 実習 is will depend on your context, i.e. the course, and thus so will how you handle the full phrase.
